

Agretti is a much loved Italian delicacy, albeit a bit unusual and seldom found in the UK, but much beloved by chefs. It is a fleshy, needle-leaved green closely related to the foraged seaside edible green, 'Samphire'. It is salty, crunchy, and reminiscent in taste to spinach. When young, we often put it in our seasonal salad mix (so you might already recognize the taste!) but it is also delicious cooked. Traditionally, it is cooked and served with lemon and oil, but also pairs exceptionally well with fish (just like Samphire!). We also love throwing it in scrambled eggs and quiches for its texture and slightly salty taste!
