Information:
Agretti is an unusual vegetable and a cousin of the much-loved, foraged, coastal samphire. It pairs beautifully with fish or eggs due to its slightly salty and crunchy texture, but can be enjoyed as a side to most meals. It is simple and quick to cook and is ready in 5-10 minutes

Ingredients

  • Agretti, fleshy leaves picked off any hard stems.
  • 1-2 garlic cloves, minced or crushed
  • 1 tbsp of olive oil
  • Fresh lemon juice, to taste
  • Salt, to taste


Method:

  1. Wash your agretti thoroughly. Pluck the fleshy leaves and branches off of any main woody stems
  2. Add the agretti to a frying pan and saute with a bit of oil for 2-3 minutes until the agretti has softened but not lost its crunch
  3. Add your garlic to the pan and saute for an additional minute.
  4. Take off the heat and serve warm with a bit of salt and freshly squeezed lemon juice to taste.
