Tzatziki is a staple in our household during cucumber season. It is quick to put together and pairs amazingly with most light summer meals, offering a refreshing, garlicky, cool cucumber taste. It's great used as a dip with carrots, celery, cucumbers or crusty bread, or enjoyed as a side to casseroles, an accompaniment to wraps or anything cooked in a tomato sauce. It comes together in 5-10 minutes and lasts 5-7 days in the fridge. Make it once, enjoy all week. This is a traditional Greek recipe.
