Radicchio is part of the chicory family and is know for its bitter, but beautiful ruby red leaves. It is a beautiful addition to salads (an you might recognize it from our Autumn or Winter salads) but it can also be cooked. We often try to supply it with the outer leaves, which you can peel back to reveal it's bright red heart. As it has a characteristic bitter taste, we recommend pairing it with a sweet and acidic salad dressing if eaten raw. Alternatively, you can grill it or roast it and eat it as a side, which sweetens the heart.
