Pak Choi is a much loved Asian leafy green vegetable with crunchy stems and delicate spinach-like leaves. It is mild and slightly sweet in taste, and very versatile in the kitchen. It pairs deliciously in rice or noodle stir fries, noodle soups or curries. Simply pull apart the leaves and stir-fry or saute for 2-3 minutes to soften the stems whilst still maintaining their crunch. They can also be cut in half and braised, or shredded into salads. We only grow pak Choi (and it's relatives) in the cooler months of the year as it tends to flower quickly in the lengthening summer days. It's a seasonal delight that we always look forward to in the cooler autumn months in delicious ramen soups and peanut satays.
