Beans, French (Rainbow)

We are happy to be able to offer Rainbow French Beans this year! We grow three varieties of French beans: green, purple and yellow. Upon harvest, we mix them to provide you a beautiful, colourful and flavorful mix to enjoy at home. French beans are an old favourite. Juicy and tender, they are a fantastic steamed or as a delicious addition to soups. When they are picked fresh, they are delicious raw, and we snack on them on the farm all the time. If left in your fridge for a while, they will become a little less succulent so we recommend cooking them instead. Rainbow beans will lose some of their colour when cooked if boiled. To keep their colour, we recommend sauteeing them gently or steaming them in a shallow pan with a small amount of water. The more they are cooked, the more their pigments will deteriorate
