Summer Squash, Patty Pan

Patty Pan squash is a cousin of the courgette (and we eat them like a courgette!). Also known as the button squash, it has a charming 'flying saucer'-like shape and is bright yellow. This is one of our favourite summer squashes. It has a sweet, delicate and nutty flavour. We pick them small at peak flavour, but you can also let them become big and stuff them like a pumpkin. These small patty pans are eaten exactly like a courgette. When they are small, their skin is soft and delicate so there is no need to peel them. Steam them, saute them or throw them into soups and sauces. We love roasting them, which accentuates their sweetness. 500g usually contains 3-6 patty pans dependant on size.
