About our Shishito Pepper, Frying

Shishito frying peppers are our chosen version of a Pardon Frying pepper. Shishitos are a seasonal delicacy unlike anything you can get in the supermarket. They are a sweet, small pepper that can be used like any green pepper. However, our favourite way to prepare them is by frying them whole (seeds and all!) in a pan until their skin is blistered and lightly charred, then splashing them with soy sauce (or salt if you prefer). When prepared like this, they become sweet and smokey and they make the best appetizer, charcuterie board accompaniment or side to any meal. For us, they don't even get to the table; we eat them straight out of the hot pan!

Shishitos: A delightful find that has followed us across borders


We first discovered Shishitos whilst working on market gardens in Australia, where they had taken the Melbourne market and restaurant scene by storm. We have been loyal growers of them ever since. Peppers are notorious for growing poorly in our UK climate. However, shishitos have been bred in Japan, and they are well adapted to cooler climates and shorter summers, which make them a better alternative to grow than other peppers more suited to Mediterranean conditions. We personally prefer them to Padron peppers- they are sweeter and more flavorful, and lack the spicy 'Russian Roulette' aspect of Padron peppers (which is that 1/10 is mega spicy!)
